Okay, so I have to admit, I hate cauliflower. But since I am trying to stay as much Paleo as possible I thought I would give it a try.this recipe is extremely easy to prepare, I made it in about 20 minutes while my turkey meatloaf was cooking in the oven.I originally grabbed the recipe from Nom Nom Paleo, one of my favorite recipe go-to apps on my iPad.
The first thing I did was fill up a large pot of water and set it on high. While I was waiting for the water to boil, I washed and trim a large head cauliflower, and cut it up into florettes and stands. Next I grabbed a heaping tablespoon of minced garlic and threw them in the water, I also saw that everything liberally.from what I understand you can also use the steamer, something I don’t have so I just boiled them. After about 10 minutes they were pretty soft, for money understand you cannot overcook cauliflower.
Once the florettes were soft I dumped everything into a colander and let it drain.once trained I then threw everything into my Ninja, or any food processor will do.this is probably the best part and something I never thought of. The recipe called for Nutmeg, now I’m not a Nutmeg type person, but I thought I’d give it a try. I added some Nutmeg, and 2 tablespoons of butter ( I used organic Ghee) which is grass fed Indian butter. Final step was to process everything until smooth. As I did make taste test, I noticed that it needed a little more salt so I added more so.
To my surprise they were amazing, you couldn’t even tell that they were cailiflower. I’m still having trouble getting my husband and my daughter to try new Paleo recipes, they both tasted the recipe, but decided they didn’t like it. Oh well, I save it for this morning’s breakfast.
